Feast will include

By THL Johann Wolfgang von Hesse

This feast is drawn from period Italian sources like the “Art of Cooking” (~1474) by Maestro Martino of Como and the “Opera of Bartholomew Scappi” (1570). The interpretations and redactions of the recipes are by THL Johann Wolfgang von Hesse and have been ‘skewed’ to better fit a modern palette, especially in the area of spices, as there was a tendency during this period to “drown” nearly every recipe in sugar and cinnamon! The following menu lists the ingredients but not the quantities or preparation to allow the diners to judge for themselves if they represent a health risk due to allergies or other conditions.
De Lasanis
An early precursor to Lasagna this redaction is a bridge between two recipes, one from Libre de Coquina and the other is Lassanis Torte. Ingredients: Ground Pork, Pancetta (Bacon), Shallots, Pesto Spices, Mix of 5 Italians cheeses, Lasagna Noodles, Milk, Chicken Bouillon, flour and butter.
Dry Brocolli
Brocolli florets steamed and oiled. Ingredients: Brocolli, Garlic, Salt, Olive Oil, Orange Juice (optional)
Rice Lombard Style
A Scappi recipe that forced me to look up what Saveloy was, much to my delight it turned out to be hot-dogs! (frankfurters specifically!) So, I give you rice with pulled chicken and hot dogs! Ingredients: Long grain rice, chicken bouillon, Chicken breast, nitrate-free beef frankfurters, salt and pepper.
Wheat Loaves (Weck)
No feast is complete without fine white loaves! Ingredients: Fine white flour, Salt, Yeast.
Cherry Rose Tarts
From the Art of Cooking, a simple elegant desert. Ingredients: Cherries, Sugar, Fresh Cheese (cream cheese), Rose Water, cinnamon, fresh ginger, pie crust.
Marzipan Treats
A simple comfit for the tables. Ingredients: Almond Paste, Sugar.
Whipped Cream (neve di latte – Milk Snow!)
By command of their Excellencies, we will all participate in the creation of this dish with a whipping party! Ingredients: Cream, Sugar, Rose Water, elbow grease.
